USA Today highlights healthy dining options at St. Olaf
Eating healthy “has become a piece of the college experience here,” St. Olaf College Vice President of Student Life Greg Kneser tells USA Today in a story about dining options at campuses around the nation.
“I’m really impressed with the students and how conscious they are of their food,” Kneser adds.
The story, titled “Dining programs set students up for healthy choices,” notes that St. Olaf provides students with a wide array of fresh, locally grown food. The college’s food service, Bon Appetit, specializes in preparing food from scratch, and the resulting entrees have earned St. Olaf a place on a number of “best campus food” lists.
Having easy access to healthy food helps students make smart choices, says St. Olaf Dean of Students Roz Eaton-Neeb ’87.
“Our students make very healthy choices,” she tells USA Today. “You don’t see a lot of weight gain on this campus.”
